I made this BBQ sauce to go with my pulled pork sandwiches but I found that it was very versatile and useful for other things like pizza or as a spiced tomato spread. Easy to make, tastes great and will keep in your fridge for at least a week.

BBQ Sauce

3 small cans of tomato paste

1 finely chopped small yellow onion

1.5 T butter

2 T yacon syrup

3 T tamari (gluten-free soy sauce)

2 cloves crushed garlic

1 T smoked paprika

1.5 t ground cumin

1.75 fl oz apple cider vinegar

Juice from 1 lime

2 T oregano

Salt & pepper

Heat all ingredients to the point of boiling. Remove from heat, let cool and blend with an immersion blender. Add salt and pepper to taste. Store in the fridge. Enjoy!
