LCHF Fast lunch pizza
To me, lunch is the most “difficult” meal on the LCHF diet. And by difficult I mean that it is the meal, I find it hardest to be creative about. It has to be fast, on most days it has to be transportable, it has to be filling and it has to vary. Very often, I end up with a salad. Chicken, bacon and avocado is a clear favorite. Leftovers from yesterday’s dinner are also popular. But what if there are no leftovers, you just had a chicken (or any other) salad and you really don’t want to run to the store and spend hours in the kitchen? Well, then maybe these small lunch pizza could be the solution….The filling can be varied depending on taste and availability, making them versatile fridge friendly.
LCHF Lunch Pizza
10.5 oz grated cheese (mozzarella, cheddar, parmesan)
2 T psyllium husks
Mix all ingredients and form two flat pizzas on a cookie sheet with parchment paper. Bake in the oven at 400 F convection for approx. 10 min. Take the pizzas out and dress them with whatever you prefer – spinach, tomato, feta, ham, bacon etc. Bake an additional 5 minutes. Leave to cool before serving. Serve with a green salad. Enjoy!
