LCHF Kale Salad

This recipe is not strict LCHF but can quite easily be modified to fit within the boundaries of strict LCHF!

I am a big fan of the traditional broccoli salad, the one that has broccoli, red onions, raisins and bacon in a mayonnaise dressing. Before my LCHF days, I worried a little bit about the mayonnaise and the bacon – but these things are my least concern now.

Yesterday, I really felt like eating something similar to a broccoli salad for lunch – I just didn’t have any broccoli and wasn’t too thrilled at the raisins. I did, however, have a large bunch of kale and fresh local apples that I had just had delivered from my local farm service. Apples are not LCHF, I know, but I allow myself a small portion when we are talking freshly picked, local apples. I found the smallest one and used half of it in my salad

LCHF Kale Salad

1 serving

3 handfuls of washed kale, cut into small pieces

1/2 apple, cubed

1/2 avocado, cubed

1 T sunflower seeds (or pumpkin seeds for a lower carb count)

1 T pomegranate seeds

3 slices of bacon


2 T sour cream

2 T mayonnaise

A splash of white wine vinegar or balsamic vinegar


Mix the ingredients for the dressing and taste. Put kale, apple and avocado in bowl and toss with dressing. Sprinkle sunflower seeds and pomegranate on top. Finish with crisp bacon. Enjoy:-)
