LCHF kalesoup

Soup seems to be my main theme – I really cannot explain why! It was never intentional, though.

Every week, I have a delivery of farm fresh vegetables (and a little fruit…..). It is a fantastic way of making sure you incorporate a lot of veggies into your diet – and even some veggies that you would not normally include. The last 3-4 weeks, I have received a large bunch of kale. I consider kale an extremely healthy vegetable but I have to admit that my kale repertoire has been somewhat limited. I made the famous kale chips – OMG they were delicious and the reason I didn’t share is that I ate them before I could get them photographed. I have also made kale salad and the very delectable creamed kale. But this post is about soup….which brings me to the kale soup, we had for dinner last night. My expectations were low – I had this bunch of kale and no other ideas for dinner, so kale soup it was. SURPRISE it was really good. In fact so good that I have no hesitation posting it here on the blog.

LCHF Kale Soup

4 servings

1/2 lb of cleaned, de-ribbed kale cut into smaller pieces

1 quart chicken broth

3.5 fl. oz heavy cream

3 T apple cider vinegar

Salt & pepper

2 apples – or use crisped bacon

Pour boiling water into a pot with the kale. Leave it for 2-3 minutes while stirring. Drain water and put kale into bowl with cold water, to stop it from boiling. Bring the chicken broth to a boil and add the kale back in. Use an immersion blender or a regular blender to make the soup smooth. Add the cream and salt & pepper to taste. Cut the apples into small pieces and add the apple cider vinegar along with the apples right before serving. Apples are not really LCHF so if you prefer, you can use a more LCHF friendly crunch such as bacon or crispy cheese chips. Serve with cheese breads and butter. Enjoy!
