I am so over the cold, the snow and all the clothes that you need to put on! Please, let Spring through now – we have had enough……Even though those are my sentiments, it seems that Winter is going to stick around for some time still. Here in New York, temperatures are supposed to fall back down to around 0 degrees Fahrenheit by tomorrow night – and frost is the name of the game throughout all of next week. Well, if nothing else, it gives us a good excuse to cook a hearty meal. I have always loved Osso Buco – and with the ease of the slow cooker, it makes for a fantastic, tasty and warming meal on a cold day. If not cooking it during the weekend, everything can be prepared the night before – and then just plug in the slow cooker in the morning, go to work, and dinner will be more or less ready upon your return.

Osso Buco

4 servings


4-6 slices of veal shank (osso buco)

Oil (I used coconut oil)

1 onion

1 red bell pepper

5 fl oz water

1.75 fl oz tomato paste

1-2 t salt

1 T cocnut aminos or tamari

Pepper


Heat the coconut oil in a pan and brown the veal shanks on both sides. Cut the onion and the bell pepper. Place all the ingredients in the slow cooker and set on low for 8 hours. Add salt and pepper to taste. And voila, delicious tender meat and the most fantastic sauce. I served with mashed cauliflower but you could possibly also serve with squashghetti or any other vegetable to your liking. Enjoy!
