LCHF Pulled Pork Sandwich

Who doesn’t love the all-American barbecue classic Pulled Pork? This version is true LCHF (but you wouldn’t know!). The pulled pork marinated over night and was made in my slow cooker and the ranch dressing based cole slaw was probably the best I’ve ever had.

Pulled Pork

10 servings

2.2 lbs of pork (I used a pork loin roast)


2 cloves crushed garlic

1 T paprika

1.5 T smoked paprika

0.5 T turmeric

1 T ground cumin

1 T oregano

2 T salt

pepper to taste


1 can diced tomatoes

1 T concentrated tomato paste

2 cloves crushed garlic

juice and peel of one lime (organic)

2 T tamari (gluten-free soy sauce)

2 T Sukrin Gold

1 T curry powder

2 T smoked paprika

1 T whiskey (Jack Daniels)

1.75 fl oz apple cider vinegar

2 T salt

pepper to taste

Mix all ingredients for the rub and cover the pork roast thoroughly on all sides. Let marinate in the fridge over night.

Mix all sauce ingredients in a bowl and use the immersion blender to get a smooth sauce. Add sauce and pork to slow cooker and cook on low for 8 hrs.


Once finished, place pork in a serving platter, use two forks to pull it apart and blend with 5-6 large spoonfuls of the sauce.

Eat in a LCHF sandwich bun with cole slaw and BBQ sauce.
