Pancakes & Bacon on a Sunday morning

There is nothing like having pancakes and bacon for breakfast on a Sunday morning – or any other morning for that sake. These pancakes are really delicious and they are sure to keep you full all the way through to a late Sunday lunch.

For 4 people you will need:

8 slices of bacon

4 eggs

9 oz of full-fat cottage cheese

2 T psyllium husk

1 T coconut palm sugar

1 t ground cardamom

Butter or coconut oil for frying

Mix eggs and cottage cheese and blend – with immersion blender or similar – to remove lumps from cottage cheese. Add the remaining ingredients and blend again. Cook the pancakes in plenty of butter or coconut oil on a hot frying pan and eat immediately with a side of fried bacon.

Feel free to add delicious grass-fed butter on top of the pancakes – and maybe also a touch of yacon syrup, if you are not too strict.

These pancakes are high in protein because of the use of cottage cheese and they are therefore very filling.

    These are fantastic!
    I usually am not a fan of cottage cheese but you don’t taste that at all. I substituted the cardamom with pure vanilla bean – soooo delicious!

    Looks good:-) Can you substitute for the cottage cheese – I really don’t like the stuff

      You could possibly use cream cheese or maybe even heavy whipping cream. However, the cottage cheese supplies lots of protein and thereby aids in keeping you full longer. And you can’t taste it at all…..
