LCHF Squasghetti Carbonara

An absolute favorite LCHF dish of mine is the “Squashghetti Carbonara”. I like this much better than the original spaghetti carbonara – and I love the fact that I am eating a lot of vegetables in a serving. It is easy to make and so satisfying to eat.

Squashghetti Carbonara

4 servings

12 oz bacon

1 onion, cut into small pieces

2 zucchinis made into spaghetti with a spiralizer or similar ( I use this – and I love it)

10 fl oz of cauliflower rice (grated cauliflower – I use my food processor)

10 fl oz heavy whipping cream

2 egg yolks

10 fl oz shredded parmesan cheese

Salt (!)

Cut the bacon into smaller pieces and fry them on a dry pan. When crisp, add the onion and fry till it gets clear. Add the cauliflower rice and the zucchinis. Whisk the 2 egg yolks in the cream and add to the bacon/vegetable pan. Add parmesan cheese Рsave a little. Allow to quickly boil, remove from heat and serve with a sprinkling of cheese on top. Salt if necessary but be very careful Рthe bacon is salty and is usually enough in itself. Enjoy!
